Death of a Starter Update: It’s Alive!
It’s been only two days since my starter caught an infection, and it looks better than ever! Fantastic 3x rise within 8 hours at a cool 68°F room temperature while I was at work. This doesn’t mean I’m done with my rehabilitation process, but I like to celebrate the little successes.
I’ve been “feeding” at a 1:1:1 ratio (34g each, I keep about 100g starter) 2x daily, once in the morning (around 7am) and once in the evening (7pm). For the first few times I tossed the top layer, just in case and fungus was still lingering, and of course I tossed the discard* as well.
For the next week or so, I’ll drop down to feeding once per day, gradually decreasing the amount of starter in the feeding ratio until I’m back down to about 1:5:5. After that, as long as nothing too funky creeps back in, we should be back to a normal schedule of feeding occasionally, every 2-3 days or so.
